I'll just bitch about the choice of Jim Carrey as Olaf.

Ok, I've pinpointed the problem- Jim Carrey is too likeable. Even when he's playing a complete bastard, you still like the character. Now, the whole point of Olaf is that you HATE him. He IS a complete bastard. If you get a nasty mean looking person, kids really hate him. But Jim Carrey invokes generic goodwill. *waves arms above head* I mean, HELLO! It's like getting... I dunno, Tom Cruise to play Denethor. It doesn't work.
